Shrimp Stir Fried Rice
Ingredients
| sesame oil | 2 tbsps | |
| olive oil | 2 tbsps | |
| uncooked medium shrimp, peeled and deveined | 1 lb | |
| frozen peas and carrots | 1 cup | |
| frozen corn | 1/2 cup | |
| cloves garlic, finely minced | 2 | |
| large eggs, lightly beaten | 3 | |
| cooked rice | 4 cups | |
| thinly sliced green onions | 3 tbsps | |
| low-sodium soy sauce | 3 tbsps | |
| Salt and pepper to taste |

- Add oil to a large nonstick frying pan or wok on medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through. Remove shrimp with a slotted spoon and plate shrimp.
- Next, cook peas, carrots, and corn about 2 minutes. Add garlic and cook for another minute and stir for 1 minute. Move
- Move vegetables to one side of the frying pan, pour eggs in the empty side, and scramble them, about 3 to 4 minutes.
- Add in shrimp, rice, and green onions, drizzle in soy sauce, add salt and pepper, and stir to combine. Cook until shrimp is reheated through, about 2 minutes.
