INSTRUCTIONS
- Prepare your coffee: Brew your espresso or coffee and set it aside.
- Combine ingredients: In a microwave-safe bowl or small saucepan, combine the milk, pumpkin puree, sweetener, pumpkin pie spice, and vanilla extract.
- Heat the mixture: Heat the mixture on the stovetop over medium heat until it is steaming, but not boiling. If microwaving, cover and heat for 1–2 minutes. Add the collagen powder to the heated mixture and stir until fully mixed.
- Froth the milk: Use a whisk or milk frother to vigorously mix the milk mixture until it becomes foamy. You can also blend the ingredients for about 30 seconds for a smoother, frothy consistency.
- Assemble the latte: Pour the coffee into a large mug and top with the frothed pumpkin-collagen milk.
- Garnish and serve: Add whipped cream if desired, and sprinkle with a pinch of pumpkin pie spice.
